What about time zones? How do they work?

One thing I've been trying to understand is how time zones would work on a flat earth. If the sun is local and circling above, wouldn't everyone see it at the same time? Can someone explain the flat earth model for time zones?

The flat earth model has the sun moving in a circle above the disc, closer to the center in summer. Time zones work because the sun illuminates a limited area as it moves.

Think of a spotlight on a dark room. It doesn't illuminate the whole room at once.
